Banana Bread with Cauliflower!?

Have any of you tried recipes from Jessica Seinfeld's Deceptively Delicious cookbook? She's got some great recipes that "hide" different veggies in them to get your kids eating healthy without them realizing it. For me, it's to trick my husband into eating better. I figured this was a good way to get both of us to eat vegetables that we normally don't eat. One of those vegetables is cauliflower. While I've read over and over again the cancer fighting benefits and large amounts of vitamin C in cauliflower, we still rarely eat it.

This is a delicious recipe for banana bread that has (surprise!) cauliflower in it.

3/4 cup whole-wheat flour
1/2 cup all-purpose flour
1/2 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 cup firmly packed brown sugar
1/4 cup vegetable oil
2 large egg whites
1 1/2 cups banana puree
1/2 cup cauliflower puree
1 tsp pure vanilla extract

Preheat oven to 350 degrees. Coat a 9x5 loaf pan or 2 mini pans with cooking spray.

In a bowl or ziploc bag, mix flours, baking soda, baking powder, salt and cinnamon and set aside.

In large mixing bowl, mix sugar and oil until well combined. Mix in egg whites, banana and cauliflower puress, and vanilla. Add flour mixture until just combined.

Pour batter into loaf pan. Bake until toothpick comes out clean. Approximately 55-60 minutes for large loaf, 25-30 minutes for minis. Let cool 5 minutes before removing from pan.
